Lasagne (A Lot of)

- MEAT SAUCE (Ingredients)
- 3 tablespoons olive oil
- 2 cloves garlic, sliced thin
- ½ cup chopped onion
- ¼ cup dry red wine
- ¾ pound sweet Italian sausage, casing removed
- ¾ pound ground chuck
- 7 cups all-purpose ground tomatoes
- 1 teaspoon sugar
- 2 tablespoons dried oregano
- 2 tablespoons dried basil
- Salt & freshly ground pepper, to taste
- In a heavy pot, warm the oil over med. heat for 1 min.
- Add the garlic & cook & stir until toasty brown.
- Remove & discard the garlic.
- Add the onion & cook for 3 minutes.
- Raise the heat to high. Add the wine & cook it off.
- Add the sausage & ground chuck. Break up large pieces.
- Cook just until the meat is no longer pink.
- Add the tomatoes, sugar, oregano and basil.
- Reduce the heat to low and simmer the sauce for 45 min. to 1 hour, stirring occasionally.
- Add salt & pepper to taste.
- Cool the sauce.
- This can be made ahead as needed & kept covered in the cooler. This sauce also works great for any pasta with meat sauce dish.
