Thai Peanut Pizza Sauce

- ½ cup cream of coconut
- 3 tablespoons rice wine vinegar, seasoned
- 2 tablespoons lemon juice
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons fresh cilantro, mined.
- 1 teaspoon granulated garlic
- 2 tablespoons pickled ginger, minced
- 1 tablespoon toasted sesame oil
- 1 tablespoon light corn syrup
- 1 cup peanut butter
- 1 tablespoon vegetable oil
- Blend in food processor the first 9 ingredients.
- Blend for 30 to 45 seconds.
- Slowly add vegetable oil to mixture while continuing to blend
- Add peanut butter and pulse 5 to 6 times to incorporate.
- Place in clean container and hold under refrigeration until needed.
