Fresh Arugula Salad

- Baby arugula, bunch
- 4 Campari tomatoes
- 4 rings of red onion
- 1 ounce shaved parm
- ½ lemon
- 2 ounces extra-virgin olive oil
- sea salt, to taste
- fresh pepper, to taste
- 4 ounces sheep’s milk feta
- Combine all ingredients in a salad bowl and toss together.
- Serve on a chilled salad plate.
