Penne with Chicken and Pesto

Ingredients
  • Pesto Sauce
  • 2 cups loosely packed fresh basil leaves
  • 2 cloves garlic, peeled
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons grated Romano cheese
  • ¼ cup pine nuts
  • ½ cup extra-virgin olive oil
  • Salt & freshly ground pepper to taste
Instructions
  1. Put the basil, garlic, cheeses and pine nuts in a food processor.
  2. Pulse the machine a number of times until the ingredients are thoroughly combined.
  3. With the motor running, slowly add the olive oil, salt and pepper.
