Beef “Flankenstein”

Ingredients
  • 2 carrots
  • 2 celery stalks
  • 1 red onion or leek
  • ½ cup of parsley
  • 1 apple
  • 1 cup raisins
  • ¼ cup brown sugar
  • 1 cup gingersnaps (optional)
  • Beef “Flankenstein” Marinade (recipe above)
Instructions
  1. Roughly chop celery, red onion, parsley, apple, raisins and gingersnaps.
  2. Take the beef out of the marinade and pat dry. Strain the marinade.
  3. Place in a large hot pan with 2 tablespoons of extra virgin olive oil and a half stick butter.
  4. Sear on all sides then add the above ingredients and sauté with the beef.
  5. After the vegetables have been heated, add the marinade.
  6. Braise over medium heat for an hour or until tender.
  7. Cool and portion the meat and top on each pizza to melt fabulously in all its sweet-sour majesty.
