Caramelized Butternut Squash
- ½ small butternut squash cut into ½-inch dice
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- Preheat the oven to 400 F.
- Place the diced squash on a pizza pan lined with parchment paper or tinfoil sprayed lightly with non-stick cooking oil.
- Drizzle with olive oil and balsamic vinegar and add salt and pepper to taste.
